Penelope Barrel Strength Batch 18
First Pass
Nose: Rich caramel, slight vegetal notes, peppercorns, chili powder
Palate: Caramel cream red hots hybrid
Finish: Sweet chili sauce, builds on roof of mouth and tongue sides
Second Pass
Nose: Dark caramel, sticky sweet, spiky, chai tea notes
Palate: Drying, rich caramel, medium mouthfeel, burnt espresso
Finish: Slight funk, cooling effect, very long
Third Pass
Nose: Dark barely sweet note, vegetal, cola, nutmeg, baking spice
Palate: Sweet black tea, clove, slightly bitter, noticeable proof
Finish: Spice build, caramel, herbal notes, long effervescent finish
Penelope Rosé Cask Batch 8
First Pass
Nose: Strawberry cream pie, cola, floral, lime zest
Palate: Velvety soft, red fruit
Finish: Oak build, slight mustiness, caramel
Second Pass
Nose: Pink bubblegum, very slight spice
Palate: Very soft, mild spice build, oak, cotton candy perfume
Finish: Slightly dry, medium spice, savory notes
Third Pass
Nose: Watermelon bubble gum, oak, tea, floral
Palate: Velvety mouthfeel, tea notes
Finish: Slight spice build, rosewater
